Rome is beautiful in any season of year and in any day though it were rain, sunshine or snow. Last year, during my first trip to Rome in a few days it were raining there. No doubt a vacation in Rome can be great when the city’s at its sunny best – but that’s usually when it’s most expensive, too, right? However the eternity city is the place you always get kaif, especially if you cared enough for bournemouth hotel accomodation, bed & breakfast, inn, guest house, hostel or apartment you can just get rest in after all.

Well, where to go in Rome in rainy day? There are many museums are open but not fully protected fron a rain, such as Forum and Colosseum are. But if you put on your rain jacket and take an umbrella you can spend amazing time.

The Pantheon is absolutely a must see, of course as well as San Pietro in Vincoli and Michelangelo’s sculture of Moses placed there.

Go to San Luigi dei Francesi to enjoy with Caravaggio’s paintings, or to Santa Maria del Popolo that has Pinturicchio frescoes, Bernini sculptures and also Caravaggio paintings. You can visit San Paolo Fuori le Mura still that has the appearance of an early Christian basilica, the cloister of this basilica is also very beautiful etc.

I’ll name no names but I have a friend who almost succeeded in putting me off spaghetti carbonara for life. Her version consisted of over-cooked pasta, under-cooked fatty bacon and eggs that were almost scrambled. Many years later we were in Italy and, having taken a local bus from Positano to Amalfi, we were ready for lunch. I opted for the good old spaghetti bolognese dish but was dismayed to hear my husband order spaghetti carbonara.

Being mindful of the hairpin bends and vertiginous cliff edges combined with my other half’s occasional travel sickness, the potential for catastrophe on the homeward trip was immense. To my surprise his carbonara in no way resembled my friend’s attempt and was in fact legendary. As soon as we returned home I vowed to try the recipe myself.

Taking inspiration from the simple yet effective ideas of companies like Schwartz, I used pancetta instead of bacon but if you can’t source pancetta then streaky bacon will do. I made sure that it was golden brown but not too crispy as it carries on cooking later in the dish. My pasta had already been cooked (nicely al dente unlike my friend’s attempt!) and this was added to the pancetta.

I had grated some pecorino cheese and parmesan and added three eggs. All of this mixture was now to be added to the pancetta and pasta. In order to avoid the scrambled egg effect the secret is to use long tongs and toss the pasta quickly and thoroughly in the mixture. It should be thick but definitely not scrambled. If the finished dish seems to be a little on the dry side you can add some water (use the pasta water if you have kept it).

Some recipes also use double cream but if you are watching your weight you can omit this. Alternatively if you want the creamy consistency without the guilt you could use low fat crème fraiche.
